HANATOMOE

Miyoshino Sake Brewery / Nara, Japan
Yoshino, where the brewery is located, is known for its thousands of cherry trees and Yoshino cedar, said to be the best in Japan. While many breweries today prefer to ferment their sake in stainless steel tanks, this brewery is trying to make sake in wooden tanks made of Yoshino cedar. Using only yeast exist in the air and in cedar tanks takes twice as much time and risk as normal sake brewing, but the resulting "HANATOMOE" is a very juicy, one-of-a-kind sake with a tropical fruit aroma. He is currently working with lumberjacks to challenge sustainable forestry in the region.
